Abalone Chowder, Submitted By Charlie Claycomb
6 strips of bacon
1 one inch round leek
2 carrots
3 celery stalks
10 red or white potatoes
1 4 inch white onion
1 quart of half and half
3 cups of milk
1/4 cup of flour
1 teaspoon of dried thyme
2 tbls sesame oil
1 tbls salt
1/8 teaspoon of white pepper
1 or 2 large Abalone
Put potatoes into pot and cover with water. Bring water to a boil and then reduce to simmer for 30min. Take out and run under cold water to cool. Then peel the skins off. Cut all cooked and peeled potatoes into 1/2 inch squares
Cut Abalone into 1/4 inch patties and lightly pound then cut into 1/4 inch - 3/8 inch squares (you need a very sharp thin knife for this) and put back into the fridge in a bowl. Pounding is optional if the ab is a soft one I just cube it up.
Grate the carrots using a cheese grater on the big hole side of the grater.
Chop the onions into 1/4 inch pieces
Chop the celery into 1/4 inch 1/4 moon shaped pieces
Chop the leek into 1/8 inch slices
In a large pot for the chowder (12qts or so) put on burner high heat and cook the bacon in the bottom. When the bacon is crispy remove the bacon and set aside to eat/use later. Now in the bacon grease on medium heat put in the onions, celery, leaks, carrots, (one of the strips of cooked bacon crushed optional), thyme, salt and pepper and cook for about 3 minutes in the grease. Now turn heat to low and add 1/4 cream and scrape the bottom of the pt well to deglaze the bottom add more cream and the milk. Stir in the flower and 1/2 of the potatoes. Stir well and add more or less milk until your desired consistency is reached. I don't like it too thick. Add more salt and/or thyme to your taste.
In a small frying pan flash fry the Abalone for 30 seconds in the sesame oil. Heat oil in pan on high and dump the Abalone into the pan - stir with a spatula quickly do not over cook - under cooked a little is fine.
Put the Abalone and sesame oil it was cooked in into the chowder add the rest of the potatoes stir up and let simmer for 20min and its ready to eat and better the next day.
