Sasha's Fish Curry, Submitted by Tom Krebs 

Recipe is very simple.

This is for fillets of 4-5 rock fish:

Heat the oil in a large pan, add 3-4 peeled and finely chopped shallots and saute for 2 minutes.

Salt and pepper fish fillets and cook them in that pan half way (about 3 minutes on each side).

Add full bottle of the Trader Joe's Yellow Curry and stir gently. Fillets will break into two or three pieces each, which is OK. Let it cook for 5 minutes on the low heat with the lid on.

Add 1/3 of a can of the coconut milk (you could find it in any Asian grocery store). Stir once again and turn the heat off. Extra coconut milk will make the taste of curry less dominant.

Let it stay for another 5 min with the lid on before you eat it.
